Do you ever get the feeling that you always cook the same flavors and stick to what your used to? Well in my household as I was growing up I know that my mum’s food always used to have some sort of curry flavor to it. Which then had a profound influence on my cooking.
I wanted to try something new but sticking to ingredients that I know will work well together.
Quite often I get these spur of the moment ideas where I will try out new flavors that I think will work well rather than my typical spicy Indian flavors.
I was looking at what types of flavors I could put together, I wanted something sweet, tangy and limey. Instead of using any of my spices from my spice tin, I used honey, garlic, coriander and lime as my main ingredients, and of course I needed a little bit of a kick so I gave in and used some chili powder and chili flakes.
Try this recipe out to change up your typical weekly meals, and you can place your chicken on whatever vegetables your in the mood for, you can even add potatoes in the baking tray if you like. I used my go to vegetables carrots, peppers and onions because I love the colors that they bring out in this recipe.
- In a large bowl add the olive oil, honey, garlic, juice and zest of limes, corinander, chilli powder, salt and pepper. Mix all together
- Add the chicken to the marinade, coat the chicken. Marinade for at least 15 minutes in the refrigerator.
- Add the chicken thighs to a baking tray and cover. Place in the oven, let this cook for 35 minutes on gas mark 6 or until done.
